Leek and Potato Soup Print Recipe
Serves: 4 - 6 | Active Time: 20 minutes | Cooking Time: 25 minutes
1 cup Sensational Soy Smooth Original 250 ml
4 tbsp Lactantia Healthy Attitude Omega-3 Margarine 60 ml
1 bunch Leeks, about three large leeks – cleaned and white part thinly sliced 1
2 cups Potatoes – peeled and cubed 500 ml
2 ½ cups Vegetable broth 625 ml
¼ tsp Black or white pepper 1.2 ml
  1. In a large heavy bottomed saucepan over medium heat melt margarine. Add prepared leeks and cook until soft. Add potatoes and continue cooking for about 5 minutes, stir occasionally.
  2. Add vegetable broth and pepper. Broth should just cover potato mixture. Add more broth if necessary. Cover and simmer for about 25 minutes until potatoes are well done.
  3. Add Sensational Soy beverage.
  4. Using a hand-held blender, or in batches in a food processor or blender process soup until smooth. Adjust seasonings and serve immediately. Garnish with snipped fresh chives if desired.

Customize the recipe:

  1. Allow soup to cool completely and serve cold (also called Vichyssoise) if desired. Garnish with snipped fresh chives.
  2. Recipe easily doubled or halved.
  3. Replace margarine with butter.
