Bacon and Potato Chowder Print Recipe
Serves: 6 - 8 | Active Time: 20 minutes | Cooking Time: 25 minutes
Ingredients
1 cup Sensational Soy Smooth Original 250 ml
4 tbsp Lactantia Healthy Attitude Omega-3 Margarine 60 ml
4 cups Potatoes – cubed (peeling is optional) 1 L
1 cup Onions – finely chopped 250 ml
6 cups Chicken broth 1.5 L
½ tsp Thyme leaves – dried 2.5 ml
8 slices Bacon – cooked and cut into small pieces 8
Directions
  1. In a large heavy bottomed saucepan over medium heat melt margarine. Add onions and cook until soft. Add potatoes and continue cooking for about 5 minutes, stir occasionally.
  2. Add broth, thyme, and bacon. Broth should just cover potato mixture. Add more broth if necessary. Cover and simmer for about 25 minutes until potatoes are well done.
  3. Mash cooked mixture with back of a large spoon or with a potato masher to achieve a slightly chunky consistency. Release of starch from potatoes will also help to thicken the soup.
  4. Add Sensational Soy beverage and stir well until heated through.
  5. Leftover soup should be stored covered in the refrigerator.

Customize the recipe:

  1. Replace chicken broth with vegetable broth.
  2. Recipe easily doubled or halved.
  3. Replace margarine with butter.
  4. Add ½ cup (125ml) of sour cream with Sensational Soy beverage for a tangier style soup.
  5. Add 1 cup (250 ml) of corn kernels in the last 5-10 minutes of cooking potato mixture.
